Peach jelly, canned peaches, peach vodka, peach cobbler…

Canned peachesRemember that scene in Forest Gump when the guy lists all the ways to make shrimp?  That is how I feel with peaches right about now.  So far I’ve made peach jelly and canned 6 quarts of peaches.  This is my first try at canning anything.  Two of my quarts do not have quite enough liquid in them so I will have to find some solution to that.  Otherwise, the jelly has been a success. We had it over vanilla ice cream and all agreed that it was yummy.

I’ve been out to the tree twice a day with my orange bucket, gathering about 20-25 peaches each trip.  We are going on vacation next week so I am hoping all these peaches will be ripe and processed by then.  If not, I leave them to the neighbors or the bears, whomever arrives first.  Speaking of bears, I mentioned in a previous blog that we had a pretty serious problem with one a few years ago.  That love affairs seems to be over and the bears have left the tree alone.

So, back to the canning topic.  That is kind of hard work.  On a hot day.  A hot, humid day.  If you ever received some homemade canned goodies from someone, kiss them like you mean it because they really slaved for you.
